wine log results

I wanted to find out what I liked in wine. Thus these recipes and results. I apologise, it is long. Sean

Wine Log 2006 fall October 8: Experiment to find what I like and what is causing bad flavors in the wine.

8 1 gal bottles

#1 Pomegranate cold 1.050 sp+maple+heat 1.058

1 cup of maple syrup 1 1/4 cup of sugar 1.092 Juice bottle list: Filtered H2O HFCS Pomegranate juice Natural flavors Citric Acid Ascorbic acid ~2 1/3 juice removed from 2 1 quart bottles added 1/2 cup maple syrup (feb13 2007) result: very sweet, nice taste (6/07)

1 cup of juice added. And bottle and stopcock cleaned up.

10/21/06 cleaned jug and added 1 cup of sugar. 11/17/2096 added 1/2 cup of sugar to all wines added 1/2 cup maple syrup (feb13 2007)

#2 Oct 8 2006 removed 2 1/3 cups of juice from 2 quarts Cranberry juice: Filtered H2O, concentrated white grape, Cranberry Puree, concentrate Cranberry Juice, 34% total cranberry Taste is rather good added 1/2 cup maple syrup (feb13 2007)

Sp: Original + maple +2c sugar

1.050, 1.065 1.082 cold cold hot=meat thermometer = ~140 degrees. Boiling noises heard 10/21/06 cleaned jug and added 1 cup of sugar. Reaction subdued. added 1/2 cup maple syrup (feb13 2007) nice taste, sweet, (6/07)

#3 Hawaiian pineapple sp juice: 1.050 sp juice and maple: 1.070 sp sugar, maple, heat 1.100

really took off.

10/21/06 cleaned jug and added 1 cup of sugar. Reaction subdued. 11/17/2096 added 1/2 cup of sugar to all wines Much sediment added 1/2 cup maple syrup (feb13 2007) nice taste, apple like, sweet, (6/07) #4 Dynamo Plus Calcium (weekend after 10/08) has carrot stuff in it, may not really work out. 1.062 before heat after maple room temp is ~75 F meat thermometer says 170 F used less liquid 2 q - 2/13 cups 2 cups sugar 1.085 when hot

#6 Limeaid 10/21

#7 grape juice 10/21

1 C maple 2 c Sugar 2q - 2 1/3 cup some more removed to bring level down added raisons to add character to wine and because level was low. 11/17/2096 added 1/2 cup of sugar to all wines added 1/2 cup maple syrup (feb13 2007) Good taste, (6/07)

#8 ginger lemonade 10/21

1 C maple 2 c Sugar 2q - 2 1/3 cup 1.070 after unmeasured remainder of maple out of 32 ounces. 1.055 boiling! Oops! It boiled while I gamed. Left a ring of stuff in the pot. 1.100 after 2 cups sugar hydrometer is at 1.00 in water even if it looks like .990, got to read it at bottom of meniscus. Added raisins because level was low. 11/17/2096 added 1/2 cup of sugar to all wines added 1/2 cup maple syrup (feb13 2007) can taste the lemon and the ginger, too much, (6/07)

Spring, march 25, 2007 #9 balck berry juice from trader joe's

4 cups maple syrup sp 1.095 ok taste, odd, (6/07)

Crangrape

1.5 cups maple syrup, over the counter 100% maple From Ralphs. 1.080 2 cups white sugar 1.110 has its own High Frutose Corn syrup. Odd taste, not bad (6/07)
