beer machine: Leaving fermentation for 9 days

HI there:



I'm new to brewing, for the moment using a Beer Machine 2000 until we move into a house where I can get a proper set up.



I started a batch yesterday and we are leaving town in three days and won't be back until Sunday.



The directions say to let the beer ferment for 3-5 days. I'm wondering if I will damage the batch if I let it sit for 8 or 9 days before putting it in the fridge to clear.



Will the beer go bad if I ferment too long?


WHat will happen?

You'll be just fine. Don't worry! The only problem with leaving your beer in the primary fermenter over a long peroid of time is mostly concerning all-grain production. You're using a kit so not as much cold break will be sitting on the bottom of your fermenter. You may consider using a secondary fermenter after most of the active fermentation stops. But don't let that worry you while you're gone. Alex
