coconut cream stout - can I use an essence?

Oct 10, 2005 1 Replies

Hi,

I want to make a coconut cream stout but I don't think it would be a good idea to use a can of coconut cream - correct me if I am wrong - as wouldn't the oil content affect the stout's head? I heard a suggestion to use a coconut essence, I have one here but it's an imitation, the ingredients are:

water, propylene glycol, glycerine, coconut flavour

If I used this would it affect the fermentation?

Suggestions please on how to make a coconut cream stout :)

Thanks,

Peter

At a guess, you'd probably be safest with a liquor flavour additive. Never heard of adding this kind of flavour to a stout. Sounds like it'd either be very good or yuk.
