Brewing a cup of tea - for those who like it very very strong.

You'll need some good quality Assam CTC [eg. Halmari, Lukwah, Dooria, Deha, Banamalie, Gatoonga, Doomur Dullung etc] for this cup. Take two tablespoons of tea in a tall glass. Pour a little boiling water into the glass ,making sure to soak the tea leaves completely and having a little water still floating. Use a long spoon to then strongly stir the tea leaves, using the back of the spoon to press the soaked tea leaves against the inside of the glass to extract all the liqour out from it. Then pass through a strainer, and pour into a normal sized mug. Top up with boiling water. Make sure to add milk. Add sugar to taste.

The golden orange, richly vibrant, soupy thick tea you get will make you catch your breath and get your pulse racing. It'll have a fantastic strong aroma too. Just right to start the day with.
