I had a particularly good day yesterday and decided to treat myself to a great bottle from my cellar so I opened a bottle of 1988 Salon Blanc de Blanc Champagne. The wine was golden in color with medium sized bubbles and a nice mousse. No degradation of the fizz so far. The nose was very yeasty reminding me of raised doughnut dough with a background sweetness to it. Plenty of hazelnut notes and a bit of milk chocolate aromas. Very firm on the palate showing a bit of maturity with red apple and apricot a zippy acidity and a slight oxidative note on the finish. I can't see this wine improving so if you got them...drink them. "A" on the Dale Scale.
