Last night with simply grilled beef tenderloin with a bit of good olive oil and shavings of Parmigiano Reggiano Vacche Rossa. I opted for the first Barolo that I came to in the cellar which ended up being a 2000 Carretta Barolo Cannubi. At 9 years old I figured it would be starting to shed some of it's youthful ferocity. Wrong. The wine was a deep garnet in the glass with a slight patina of brick. Very "tarry" nose with a bit of crushed blackberry and spice. Medium weight on the palate with good underlying fruit, some black cherry, blackberry a hint of spicy oak and a bit of bittersweet chocolate. The finish was still really quite rugged and tannic and was help considerably by the meat and cheese. A good pairing but the wine still needs another five years. "B"
