Yes. True wine is bitter. This Bulgarian saying is the reprise of this song, which is called, appropriately enough, "Bitter wine":

Most people do not like much bitterness in mature, classic table wines. However wines with various herb and spice additives, such as wormwood which is rather bitter, are very popular in some countries such as Italy and France. Vermouth, based on red or white wine, is very popular to drink or mix in cocktails.

Does anyone know which of the following is more tradtitional?:
- Some winemakers believe that stems only add bitterness and harsh tannins, whereas others believe it assists in aeration during fermentation and lends an aromatic spiciness that cannot be denied.
