Cassoulet-Dale

Here in Virginia I have a deuce of a time finding duck legs for making cassoulet or confit. I noticed that your wife seems to make duck legs quite a bit. Do you have a good source for duck legs. Buying 6 ducks just to get 12 duck legs is impractical for 2 people but my local butcher says he only gets whole ducks and has no intention of parting with the legs alone though I can routinely buy duck breast.

Seriously, if the butcher has duck breast, he has to also have the legs hiddens somewhere. If he is getting duck breasts from a wholesale provider, it would seem that there would also be some legs available through that source.

One need only shop the local supermarket to notice what Tyson has done with chicken parts--"parts is parts". I think they even package a choice of either right only or left only legs and breasts--for those who wish to maintain their proper political orientation. Or, maybe that was only right wings and left wings I saw?

Betsy routinely buys just legs (or just breasts, or whole birds) at Fariway in NY. Our local supermarket sometimes has duck legs only (my guess is that restaurants buy more breasts). As Bill Lee notes, d'Artagnan sells both raw and confit legs.

Tried that. No one would tell me where the legs went. This always reminds me of the old National Lampoon cartoon with a frog coming out of the kitchen wheeling itself on a cart with a sign above the kitchen saying "Special, Forg Legs"
