Just received a gift of Frick (California) Cinsaut. I've never seen Cinsaut bottled as a varietal before, are there any ideas for food pairings, or other experience with a Cinsaut varietal bottling?

Just received a gift of Frick (California) Cinsaut. I've never seen Cinsaut bottled as a varietal before, are there any ideas for food pairings, or other experience with a Cinsaut varietal bottling?
I've had the Frick cinsault before at the girl & the fig in Sonoma and I liked it. They say on the Frick web site that it goes with bird dishes and that's probably a good guess.
Speaking of cinsault, I have seen it spelled "cinsault" and "cinsaut" in print. Which is corrrect? or are they both correct? ... or neither?
