Food and Wine matching

I like food and wine matching. Often they go well together and complement but now and then a specific wine and food can be synergistic. Now and then I come across one, often by chance. Unfortunately I tend to forget what they were so thought I would write some of them down.

Tonight it was a 2007 Ravenworth Hunter Valley Shiraz with Maggie Beer Pate on crispbread. The whole junipers in the glaze along with the gamey pate itself matched brilliantly with the young shiraz drawing out some sympathetic new leather alongside the plummy fruit that I didn't think I would see for a few years yet.

Another that comes to mind was a 2004 William Fevre Bougros Chablis last Christmas with WA crayfish freshly caught by a friend's sister with salted butter. The salinity in the wine just danced on the tongue in tandem with the food.

Any favourite combinations that anyone else has come across lately?
