Bugrundy feast - What to serve food and wine

Good afternoon.

As the season changes, I've decided to try and put together a feast based on the wine and food of Burgundy.

I've just recieved a copy of Burgundy Gastronomique and have started to think towards the menu, but I was hoping to get some opinions to make it a representative meal.

Any suggestions to wine and food is most appreciated.

MAINS

DESERT
