The 88 Chateau Latour probably is still a baby if it has been well stored. M. Broadbent rated it 4 out of 5 star in July 1998 and said: "A good, medium-term wine, say 2012 - 2020." Unless you find some more recent tasting notes that indicate it has developed faster than Broadbent expected, expect a very full wine, perhaps rather tannic, with the fruit perhaps a bit hidden until it has a few more years of age. If you have several bottles of this wine, it would be interesting to have one now, and another after a few years to see how it is developing. If I only had a bottle or two, I think I would wait a few years. At this stage the wine probably would benefit by decanting, but it is difficult to say how long to wait. It would be interesting to taste it at about 1 hour intervals, but this might not fit in well with dinner plans. I might serve it with rack of lamb, but it should go very well with good beef. As long as you do not use too much spice, mustard, garlic, vinegar, or hot pepper on the meat, you probably will not go far wrong with many meats.
