88 latour

I posted a month or two ago, about pairing an 88 Latour. I've put off opening it until later this month. This is the oldest of my first growth collection, and therefore the first one I'll be opening. Even so, I think I'm pushing the envelope on '88. But I'm anxious. I'm just curious about how long I should let it decant. I'm sharing it with a couple who will be arriving late afternoon. I'd like to have it pretty well ready for their arrival. I don't want to have eaten and notice the last mouthful is opening up around 10 pm.



Any wisdom on ideal breathing time?
