I enjoyed a great bottle of Young's Vineyard - Barbara - vintage 2001. Some of my wine friends are under the mistaken impression that you can buy any wine, store it for any number of years and actually improve the quality of the wine. I feel that a sizeable group of people out there are, right now, as we speak, making some very nice vinegar.

I think you're correct if what you're saying is that the majority of wine in the world is best consumed early. But very little of it actually turns to vinegar, something that requires bacterial action. Most of it just gets less interesting as fruit flavors fade.
