Any thoughts around water chem for 5 gallon red wine kits? Water is water?
My frame of reference is brewing good Irish stout.
Going to try 5 gal Evian with 2Tbs calcium carbonate for a Cab kit.

My opinion - spring water. Not distilled, but nothing fancy. And then only if your tap water has a real off taste.

No tap water with chlorine or chloramine taste either. You don't want TCA taint when/if you oak age the kit.
