Bottling '07 Whites

I'm curious - how many of you have already bottled your '07 whites? Or, when do you think you will be bottling them?

My '07 Viognier has been fined with bentonite, but not yet cold stabilized. I'm letting it gather a little bit more age before bottling

- probably will bottle in March or April.

I haven't bottled any of the '07 whites yet, but several of them are looking ready - nice and clear. I hope to start bottling some of them by the end of February. I've got some Viognier as well - not quite as flavorful as I'd hoped for, but reasonably pleasant. I may just blend most of it with the Chardonnay.

This is a tweener but I bottled my 07 White Grenache; it's very light salmon, almost white. !/3 of it is already gone. The other whites are not ready except for Niagara.

I did bottle a small batch of sweet Traminette back in late December, to get ready for a wine tasting. The main event, a blend of Vignoles and St. Pepin, is still cold stabilizing in the garage.
