Hi Jim, I'm aware that there are a number of them "out there" but I haven't seen any available commercially for the home winemaker. Do you know of some that are available? I'd be interested to see what they have been engineered for. In the past I have posted on yeast that can carry out malolactic fermentations and some of the DNA array work trying to identify the genetics behind specific phenolic properties. However these were all experimental yeast. Tim, B.C.
Hi Tim Professor Hennie VanVuuren PHD. UBC is the patent holder for the yeast and it is made in the US buy Lesaffre Yeast Corporation and distributed by American Tartaric Products Inc. the product is called ML-01 yeast. It designed to carry out not only an alcoholic fermentation, but a malo-lactic fermentation at the same time.
