Ice Wine Alternatives

Hi, I have been making wine for years. Two years ago, my wife and I made ice-wine from a kit. It turned out quite nice, however, we quickly realized that we made more than we can possibly hope to drink. It is good, especially in chocolate 'shooter' shells. It is not good enough, however, to share as a gift.

Can anyone suggest any other food/drink recipes which use ice wine as an ingredient... e.g.. spritzers, specialty drinks, juice mixtures, jams, jellies, etc. I even heard someone made salsa with ice wine as an ingredient. I was not able to secure the recipe. (Perhaps it wasn't very good and they were fearful of giving it out!)

ANY suggestions are welcomed.

Syrup on icecream, pancakes, waffles or milkshakes. Try it in a fruit salad or fruit cocktail. If you home can pears you can use the wine as syrup in the jar. It will do a jelly if you want to make jelly.
