Apparently the geeks in Europe have mapped the genome for vitis vinifera. Which raises, in my mind, the question: will it now be possible to predict the flavor / phenolic character of any specific clone by mapping genetic traits to such characteristics?

I think it depends what you truly mean by "will NOW be possible" (my highlighting of course). If by now, you mean at some point in the future, I'd say undoubtedly. If you mean now as in the next fifty to hundred years, I'd be inclined to say definately not. Flavor, like personality, freckles, voice tone, bark texture and leaf color and funny walk is likely to be consequent of many genes, and equally down to environment, development, nutrient and weather. IMHO.
