I plan on adding a few liters of fresh juice to last years' completed muscat and gewurtztraminer, before bottling. I had planned on filtering the resultant mixtures, both to clear out any haziness and to hopefully filter out any residual yeast cells. My plan was to use the Type 3 Buon Vino filters.
My question is this: Can I be confident that the filtration will prevent a renewed fermentation, or should I be safe and add some sorbate? If so, how much? Right now, the muscat and the gewurtztraminer are bone dry and have been stable in a carboy for about a year.
