Newbie Blending ?

I have just completed my 1st batch of wine (Shiraz). Alcohol content is fine 15%. Wine tastes a little acidic. Most assuradely not drinkable at this juncture. I reread my text and it suggested blending. I was wondering if the blending should be now or several months down the road after the wine has a aged a bit. I was planning to bottle for storage, and would hate to waste my time only to have to blend later.



Any suggestions would be most appreciated.

Ideally blend later after bulk aging. The wine will change over time. What seems too acidic today will mellow out in time and blending may not be necessary. Don't bottle wine that doesn't taste good. If storing the carboy is not realistic, find a friend to store it for you. My comments assume that your wine is very young.

I agree, except never blend just before bottling. you always want to give the blended wine some bulk aging.
