There's a Greene King DVD in the current issue of the Publican designed to encourage good cellar and pub management. To those of us on this side of the bar it's unintentionally funny. If you get on well with your local landlord ask him if you can borrow it.
It's a jokey fake-black-and-white-silent-comedy film about a GK manager who goes on holiday and his relief manager does everything wrong - doesn't clean the beer lines, doesn't manage the casks properly, serves huge heads, is surly with the customers etc. What GK don't seem to realise is that most of their pubs are like this normally! (Or perhaps they *do* realise this, and that's why they've made the DVD).
Interesting that according to GK, serving beer in a glass with the branding facing away from the customer is a sin on a par with turning the chilling off in the cellar :-) Also, the example of a 'perfect pint' still has a head about an inch thick - maybe a perfect pint for the manager's monthly profit figures...
