caramel beer/stout

Sep 15, 2006 2 Replies

Hi,

I was just wondering what flavour, if any, would be imparted by melting sugar (amount undecided at present) to produce caramel, and then adding this caramel into a pot full of boiling extract (Draught). During fermentation, the sugar would be digested by the yeast, but would this leave a caramel-like flavour to the beer?

Thanks,

Richy

I think it probably would add a caramel flavour but you can get better than that by boiling and reducing some of your wort. Bear in mind it will change the colour of your beer as well. Steve W (in Aus)

I haven't tried it, but people who have report that it has no effect on flavor at all.
