can i match a bitter wine f.i. a cooled Chinon with bitter meals like endives, hare, pepper sauce .....
any specialist in the chemistry of the sense who could help me

Like Mike T. bitter Chinon doesn't sound like Chinon, but though I like red chinon with duck, I am not sure I would match red or white loire valley with hare. I would go for Beaujolais for red and Burgundy (St. Veran for example) for white.
