Jambalaya and . . .

Looking for ideas. The Jambalaya (Shrimp, Andouille Sausage, garlic, cayenne, tomatoes etc) is fixed so what can I do for damage control wine wise?

I've served a nice Riesling many times with jambalya .... works great Also ... a crisp Blanc - de - Blanc Art Stratemeyer ============================
