OT: Butcher in DC area

Thought this might be a place to ask: does anyone know a good butcher in the DC area? That cuts and ages own meats, I mean, and doesn't present under plastic.

Inquiring minds (in DC) want to know. TIA!

I do not know what quality of meat you want. If you want the best US Prime grade that is dry aged in the traditional manner, you will not find it in most areas. Far under one percent of beef is of this quality today. Your best bet usually is to have it sent by overnight air. The best source I know on the East coast is Lobels in New York City. They will ship all over the country.

Needless to say you will have to pay $US 25 or more per pound for the most desirable cuts of meat of this quality. However it is less than you would pay in a top steak house that serves this quality of meat.

I'm not a local to DC, but last weekend did have the chance to visit the 'Eastern Market' just a few blocks away from the Capital- several butchers, cheesemongers and a fishmonger- lots of fresh whole fish, tons of sausages, meats, cured meats, you name it- plus a market outside with veggies, fruit, art, jewelry, etc. definitely worth a short day trip- just bring a cooler for those whole rockfish and cheeses-

we went on a sunday, so I'm not sure if it is open during the week or not- perhaps a DC resident could expand on this-

I thought I had replied to this, but I don't see it here.

Union Meat in Eastern Market cuts from side of beef. I don't think they age the beef. That is done in an aging factory. I thinhk beef is first aged, then cut.

Do not go on Fri,Sat, or Sun. Very busy. Don't go on Mon either, as I think that is the day they are closed.
