This is so true. Here in Newfoundland we get Caribou from mainland Labrador and Caribou from the Island. Most agree that the Labrador caribou is much much tastier.

Thanks for that - I didn't know about NA elk.

NA moose and E elk are indeed close relatives, but there are differnces, I understand. And, yes, elk is very lean and not as gamey in taste as some other game. My dad claimed elk and cows could breed, but it sounds a bit unlikely to me. Rural legend, perhaps :-)

Answering as one to whom English is a second language, I would say that venison is all deer meat. The problem is the naming issue concerning cervus elaphus over the Atlantic - some blunderbuss-toting hunter who named the incumbent variety of c elaphus 'elk' rather than 'red deer'. According to the Wikipedia venison is NOT the meat of 'elk', but, I would suppose that they are referring to 'elk' as in Alces alces. Once again we appear to find that English is the language dividing Americans and British.
