Probably an OT question, but do you know the scientific name for your crayfish? Things like that seem have confusing names in different parts of the world and to live both in salt and fresh water. They eat "crayfish" in Louisiana too but, tho' I've been to Sweden a few times, I've missed that festival :-)

As for wine pairing, a full-bodied dry or off-dry white with good acidity for me. Alsace comes to mind, as does the Loire, the Rheinland and Austria.

There used to be a Cajun restuarant in my little town. Etouffee and other dishes, but the basic is just boiled (boiled in heavily seasoned water, using a crab boil mix and some cayenne). Twist off the heads (suck on them if you wish), eat the tail meat. Crisp dry white (or beer) .

Whenever I am in NO I go for Alsatian pinot gris with etouffee.
