I purchased a couple of En Primeur cab kits and just before picked up a PH tester. I got a finished reading on one of the cabs at 3.65 and a starting on the other at 3.71. Is this a little high for a red? I would assume the kits are adjusted for PH. Should I be trying to adjust before fermenting?
Any advice would be apprecitated.
