Experience with WLP727?

Oct 21, 2004 2 Replies

I'm going to try making a wine from the Welch's White Grape+Peach, and am thinging of trying WLP727 Steinberg-Geisenheim yeast with it.

Could someone who's used this yeast share their experience with it? It's described as being fruity, and that's what I'm aiming for, but firsthand experience (like what fruits the esters tasted like) would be appreciated.

Thanks!

Hi;

I did Jack's recipe for White Grape and Peach he has on his site. I used Lalvin D-47 and found it to really work well with the Welch's concentrate. Found the fruity peach flavor to really standout, which is what I wanted. Only made 1 gal and consumed it fairly quickly. Not sure how the flavor would hold up over extended aging time.

Good luck, Mark

How long did you age it for?
