how to choose grape variety in southern spain ?

So I am enthusiastic about developing an organic vineyard on my 5 acres of suitable (I think) land in southern Spain on the fringe of the 'Sherry' areas. Clearly there are many decisions to be made and one of the most important is : What variety of grape should I use? I would want a grape that can resist as far as possible fungal disease although I know that some copper sulphate spraying will become necessary. I want a vine that can be trained along 3 strong wires in rows supported by 6 foot posts. I want a grape that can be used either for wine or for juice. (silly point I guess) I am not fussed whether it is white or red as the most important matter is the quality of the juice. Any pointers as to where I should look for information?

Dear Nige,Why do you not see what types of vines the locals (Spanish growers)are growing, and then do some research on those varieties.I think that all vine varieties could be trained on three wires as youdescribe.Also you would not have much of a problem with fungal diseases(mildew), with any variety, down there.Good luck with your project.Arthur

I have been through a similar situation and it turned out that I did not like the wine of the grapes that grow well where I am. I am now tearing them out and planting grapes that do well and make a wine I like (cabernet franc and baco noir. I suggest you check what the locals are growing and then try those wines. Pick the wine one you like best. It will then be your challenge to grow it.
