Prune Plums and Port Wine Comments Please

My dear neighbor harvested his prune tree yesterday and gave me about

30 pounds (weighed with pits).

This morning i'm smashing and de-pitting them and eating a few and thinking port with these plums instead of the Petite Syrah I'd planned for port wine.

So here's a basic plan for 3 gallons of Prune Plum Port:

25 lbs of Prune Plums 1 lbs golden raisins Priemer Cuvee

Ferement on skins

Add sugar in stages till alcohol level is as far as yeast will take it.

Add Everclear to 20% as (if) needed.

Sweeten to taste.

Age and bottle.

Commets please as this will be the first time for a port>
