The wine that won first place, fruit category, was a blackberry/Chardonel wine blend. Frederick, I made this wine in 2005 starting with some concentrated blackberry juice I bought from a local commercial winery. I diluted 1 gallon concentrated BB juice to 4.5 gallons with water before fermentation. The numbers were 18.4 brix, 3.1 pH and 1.9%TA. I used Fermiblanc yeast. After fermentation the acid was still way too high. I blended the BB wine with Chardonel wine made from my grapes 50/50. This blend had a 3.28 pH and 1.0%TA. It was too dry so I sweetened with sugar to

5.6 brix. This was the wine entered in the contest.
