I took a really nice (283lb) 10 point buck this year so we grilled a venison loin ( I got four large sections of loin from this huge Ohio buck). I opened a bottle of 1999 Chave Hermitage from a case that I bought on release. I opened the wine and decanted a full two hours before dinner. Dark red with faint brick cast. Nose of raw beef, iron minerality and cassis. Fair amount of acidity on the front of the palate which faded into a burst of black berry, plum and red beet notes. Long somewhat tannic finish. "A-"

That's nice to hear, Bill, as I have a lone bottle of this that I won in a Katrina raffle some years ago. I've heard mixed notes about this wine but yours sounds like what I would expect. How ready did you feel it was?

Mature but not old. Farther along than I would have expected yet still quite tannic. Really needed the two hours I gave it yet the fruit was starting to show some age.
