I grilled some wild venison chops last night and opened my first bottle of 2005 Clos Des Papes CNP. Fairly deep reddish purple in the glass with a fair amount of gylcerin hanging on the sides of the glass. Nose of red rasperry, black pepper and asian spice. Medium weight on the palate, plenty of sweet ripe red and blackberry up front with a fair amount of plummy flavors. A bit of bittersweet chocolate and black coffee on the fisnish. Firm but smooth tannins. A really good wine now but will get better over the next 3-5 years. "A-"
