I read a book that red Vin de Pays d'Oc wine can be laid away for approx. 6 years. Can anyone confirm this? Does it apply to all cépage wines? Does it mean that Cabernet Sauvignon, Merlot and Shyrah can all be stored for 6 years? Can anyone tell me more about this?
Is it recommendable to keep this country wine? Coz if it is worth the effort than it means that one can enjoy these good wines which are quite affordable when they are still young.

No, some growers will make wines for quick drinking, others for laying down. Mike Tommasi is probably (certainly) better placed than I to talk about these wines.

In my part of world, Holland, Vins de Pays d'Oc are all abound at affordable prices. But there are so many different producers which makes it not an easy job to pick the real gems.
Last nite I opened a Vin de Pays d'Oc Merlot 2002 from producer Nouaison. It really tasted well, smooth and full of flavour. It will be no surprise that those wines will excel most average AOC wines in near future.
