So I'm trying to figure this out. There's a flour crust with creme fraiche and mustard seed? Inside that is cauliflower in a white bean & tomato sauce with anchovy/caper flavors? I'm clueless re green dust!
If my parsing is correct, that's a complicated dish, and I'd say you are on right track with a white that's not too dear. This is not something I'd tr y a GC Burg, a GG Riesling, or something else expensive with. Arneis would be a good start, or maybe Soave, Catarrata, Fiano, Verdicchio (I'm thinkin g with anchovies, capers, and tomatoes of Italy).
If verdicchio is possible Vermentino esp. de Sardinia would be my choice
I recall being very pleased with an Arneis by Bruno Giacosa as an accompaniment to a vaguely comparable dish (that, however, did not contain the intriguing Green Dust, I confess).
