the cost of not doing an additional racking

A couple of weeks ago, I asked about doing an extra racking after the secondary, due to the large layer on the bottom.

I ended up not transferring. In hindsight, I should have. My reasonaing was the huge airspace in the carboy . . .

Anyway, all but the last two bottles were fine (and the quarter bottle left).

I ended up sitting them on the counter, full to the brim, covered with aluminum foil. They took about a full week to transfer . . .

This time, I'm transferring after a week in the secondary. I'll probably flood the next carboy with CO2 before racking.

To keep the air out. I was initially expecting them to settle overnight. The plan was to pour into anouther sterile bottle and cap.

Instead, we ended up drinking them (one poured into large glasses; the other into another bottle).
