I am considering serving either an '86 or '89 Ch. Lynch Bages with (a nice) dinner. Any thoughts on what might be a reasonable amount of time to allow them to breath before serving them? They've been well-stored since release. (And, no, I can not just open them and wait until they're "ready". There is some amount of timing involved with the dinner.)
