Federweisser

Does anyone have a recipe for Federweisser? As I understand it, Federweisser is a young German wine that is still fermenting when consummed. I'm hoping to make something like it for a friend of mine who is going to supply the traditional onion pie that goes with it.

Recipe? All white wines that are still fermenting taste like grapefruit to me. What does it matter? Pick up any kit and start drinking when you get to around 0 Brix. Best invite a few friends. You have 5 gallons to get through and once that yeast starts settling out, you might as well write off the batch.

Do I sound like I'm not impressed with what you want to do? About the only thing good about this is that you don't need to waste time bottling. Just dip your glass into the pail and suck it back. Remember, no appreciative swirling and chewing on the palate. This is a chugging wine.

I agree! However, my friend raves about the combination of Federwiesser and onion pie. He hasn't led me wrong yet, so we'll give it a try. A gallon batch and a few friends sounds about right to me. If the "wine" is a bust then that's just an excuse to break out the good stuff.

Unlike Brian I love fermenting white wine...from the original post I'm guessing this is Federweisser. I was in Colmer, France in October years ago. At lunch the waitress asked if I would like some new wine. I presumed I would be given a glass of Beaujolais. But, I received a glass of cloudy, bubbling grapefruit tasting wine. I loved it and have looked forward to "new wine" ever since. The onion pie is a special dish in Alsace and should be excellent with Federweisser. I make Vidal, Chardonnay and Chardonel white wine. They all have this flavor while fermenting.

It is very much a tradition in Germany at the Wein fests to imbibe vast quantities of new wine. It is a good many years since I did it ( late

60's), but it was like drinking green cloudy fizzy cider and was extremely potent since it was served in German beer size glasses. I took my Signal Squadron down to Speyer on the Rhine every autumn as a squadron exercise ( in fact a 2 week "holiday") and you can guess the state of some of my lads after a night out on the Neuwein. I used to keep a truck and a 4 man squad on duty as a "round up and collect party". There were some sights!!!!!!!!!!!!!!!!!!!

I don't know about the wine but the pie is really good! Just had it tonight! I didn't think I'd like it because of the huge amount of onions but it was great! I did notice several variations with the recipes... I guess next time I start a batch of white wine we'll have them together
