I imagine that it would be possible to find supplies in a city as large as Hong Kong, check the phone book or online for a store in Hong Kong that sells supplies... worst that could happen is that you would need to mail-order supplies.

Meh-Look for a local homebrew or winemaking shop. Buy a wine kit and the equipment the store suggests. Buy the book "From Vines to Wines" by Jeff Cox. Read about winemaking on these excellent web sites;
