Dear Mr. Redhart/Rumprider/Donduk, How about you go back to flying your model airplanes and leave wine to those of us who are at least 21 years old and _behave_ like it?!

Easy to predict: Faster, but more uniform ageing under synthetic. Slower (for the best bottles), but much more irregular under cork, including different levels of TCA, fruit scalping and random oxidation.

P.S.: On Monday we tasted one wine, Willi Sattlers Styrian Classic Sauvignon Blanc 2003, bottled in February 2004 under three closures. The first three came from his cellar, the last from my dining room, where it has been lying since release.

1) Glass stopper (Vino-Lok = VinTegra) with PVDC lining: Easily the best: fresh, vibrant superb fruit.

2) Synthetic stopper (nomacorc): Dumb, very evolved, no fruit, well over the hill.

3) Cork stopper a) First bottle: slightly corked. b) Second bottle: Quite good, more evolved than 1), but on the harmonious side.

4) Glass stopper (warm conservation): Good fruit, although quite evolved, but more harmonious than the synthetic.

General opinion of order of preference was #1, #3b, #4, #2; #1 leading by a large margin.
